Wine Poached Salmon
Ingredients
For the Poaching Liquid:
   2 cups water
   1/2 cup white wine
   1/2 a fresh lemon
   1 teaspoon salt
   1/2 a small onion, quartered
   1 stalk celery, with leaves, quartered
   1 large sprig of fresh dill, leaves and stem
   1 bay leaf
   6 peppercorns

   2 to 4 salmon portions, 4 to 6 ounces each


Directions
For the Poaching Liquid:
Add water and wine to the crock or inner bowl of your slow cooker. Hand squeeze a large shot of juice from the lemon into the water, then drop in the lemon half. Stir in remaining ingredients (through peppercorns), cover and cook on High for 30 to 40 minutes.

Nestle salmon portions into the poaching liquid, cover and poach on High until salmon is opaque throughout and flakes easily, 20 to 30 minutes.
