Italian Style Braised Pork
   2 1/2 pounds boneless pork shoulder, in 2 to 3 inch cubes
   Salt and pepper, to taste
   2 tablespoons olive oil (for browning, optional)
   1 large onion, chopped (about 1 1/2 cups)
   1 stalk celery, chopped
   3 cloves garlic, peeled and minced
   3/4 teaspoon fennel seeds
   1/2 cup red wine
   1 can (28 ounces) crushed tomatoes

Season pork on all sides with salt and pepper.

If browning, brush seasoned meat with the oil. Preheat a skillet or your contact grill on medium high heat, or follow your manufacturer's instructions for browning with your Slow Cooker. Working in batches, brown meat in a single layer, not touching, 3 - 5 minutes on all sides.

Stir vegetables, garlic, fennel seeds, wine and tomatoes together in your slow cooker's inner crock. Add meat. Cover and cook to an internal temperature of 195 - 205 degrees(F), about 3 - 4 hours on High or 7 - 8 hours on Low.

Transfer pork to a serving dish and cover to keep warm. Discard any large pieces of fat.

Skim fat from sauce, pour over pork and serve. Pork and sauce can be held on Keep Warm up to 1 hour, until ready to serve.
