Italian Style Braised Pork
Appliance: Slow Cooker - 4 quarts and larger

Ingredients
   2 1/2 pounds boneless pork shoulder
   Salt and pepper, to taste
   2 tablespoons olive oil (for browning, optional)
   1 onion, diced
   1 stalk celery, diced
   3 cloves garlic, minced
   3/4 teaspoon fennel seeds
   1/2 cup red wine
   1 can (28 ounces) crushed tomatoes


Directions
Season pork on all sides with salt and pepper.

If browning, brush seasoned meat with the oil. Preheat a skillet or your contact grill on medium high heat, or follow your manufacturer's instructions for browning with your Slow Cooker. Brown meat 3 - 5 minutes on all sides. In same pan, or without cleaning grill, saute or grill onions and celery 3 minutes on closed contact grill, 5 - 6 minutes on open grill or in skillet, scraping up any browned bits from the meat.

Stir vegetables, garlic, fennel seeds, wine and tomatoes together in your slow cooker's inner crock. Add meat. and cook on high 3 - 4 hours (7 - 8 hours on low) to an internal temperature of 180 - 185 degrees(F).

Transfer pork to a large platter or board and shred meat using two forks. Discard any large pieces of fat.

Skim fat from sauce and return shredded pork to slow cooker. Stir to combine with sauce and keep warm until ready to serve.
