Brisket with Onions
Ingredients
   1 large onion, sliced
   1 beef brisket (about 4 pounds), fat trimmed to 1/8-1/4 inch
   Salt and pepper, to taste
   2 cups low-sodium chicken broth
   2 cloves garlic, smashed
   2 bay leaves


Directions
Scatter onion over the bottom of the crock or inner bowl of your slow cooker. Season brisket on both sides with salt and pepper and lay it on top of the onions, fat side up. Pour broth around meat and nestle garlic cloves and bay leaves in the liquid.

Cover and cook on until brisket is tender, about 6-8 hours on High. Remove brisket from slow cooker and slice thinly across the grain. Discard bay leaves and garlic. Top slices with the onions and drizzle with a little of the cooking liquid. Serve.
