Brazilian Black Bean Stew
Appliance: Slow Cooker - 4 quarts and larger.

   3/4 pound smoked sausage, chopped
   1/2 pound cooked ham, chopped
   1 large onion, diced
   4 cloves garlic, minced
   2 large sweet potato, peeled and diced
   1 large red bell pepper, diced
   1 (14.5 ounce) can diced tomatoes (with juice)
   1 jalapeno or Serrano pepper, seeded and diced (optional)
   2 cups chicken broth (plus additional, if necessary)
   3 (15 ounce) cans black beans, rinsed and drained
   Salt and pepper, to taste
   1/2 cup chopped fresh cilantro, plus additional for serving
   One fresh mango, peeled, cored and diced (optional)

Mix together the first ten ingredients (through black beans) in the crock or inner bowl of your slow cooker. Cover and cook 2-3 hours on High or 4-6 hours on Low.

Season to taste with salt and pepper and stir in cilantro. Cook an additional 15-20 minutes. Serve topped with mango (if using) and additional chopped cilantro.
