Upgraded Vegetable Ramen Soup
Appliance: Rice Cooker - 6 cup capacity and larger.

   2 cans (14-14.5 ounces each) lower sodium broth, any variety
   1/2 inch piece of ginger root, peeled and grated (about 1/2 teaspoon)
   2 garlic cloves, minced
   2 whole scallions, sliced thinly, some of the green tops reserved
   2 teaspoons soy sauce
   1 cup frozen mixed vegetables, any variety
   1 package ramen, any flavor
Optional Garnishes:
   Sriracha or chili oil
   Sesame oil
   Chopped fresh cilantro

Add broth, ginger, garlic, scallions and soy sauce to rice cooker's inner bowl. Cover and press cook button. Use brown rice or porridge setting, if available. Bring to a boil and cook 5 minutes. Switch rice cooker to Keep Warm and allow broth to simmer, then steep for 15 to 20 minutes and up to 4 hours.

When ready to proceed, push Cook button again, using white rice setting, if applicable. Once broth comes back to a boil, add frozen vegetables and cook for 1 minute. The soup may not come back to a boil right away. Meanwhile, remove flavoring packet from noodle package and discard or save for another use.

Add noodles. Cook, stirring often to separate, for 3 minutes. Serve soup sprinkled with the reserved green onion tops and your choice of optional garnishes.
