Southwestern Style Black Bean Soup
Appliance: Rice Cooker - 8 cup capacity and larger.

Ingredients
   1 tablespoon oil
   1/2 large onion, diced
   2 cloves garlic, minced
   1 cup "Pulled" chicken or precooked chicken
   1 (15.5 ounce) cans black beans, drained and rinsed
   2 cups chicken stock or broth
   1 cup (about half 14.5 ounce can) diced tomatoes
   1/2 to 1 (3.5 ounce) can diced jalapenos (to taste)
   1 (8 ounce) can whole kernel corn, drained OR 3/4 cup frozen corn
   1/2 tablespoon chili powder
   1/2 teaspoons ground cumin
   Salt and pepper, to taste

Optional Garnishes:
   Sour Cream
   Chopped Cilantro
   Sliced avocado
   Hot sauce
   Crumbled cotija cheese


Directions
Add oil and onion to rice cooker's inner bowl and push Cook button. Use saute setting, if available. Cook, stirring occasionally, until onions are just beginning to brown, about 5 minutes. Add garlic and cook an additional minute, stirring frequently.

Add the remaining ingredients and stir to combine. Cook, stirring occasionally, for 20 minutes.

Serve with garnishes of your choice.
