Vegetable and Tofu Stir Fry with Ramen
Appliance: Rice Cooker - 8 cup capacity and larger.

   1 package (14 ounces) firm or extra-firm tofu
   1 1/2 tablespoons cooking oil, divided
   1 package (14 - 16 ounces) frozen stir-fry vegetables (any variety)
   2 packages ramen, Oriental flavor
   1 3/4 cups water

OPTIONAL: Press tofu by lining a shallow pan or rimmed plate with a folded kitchen towel topped with two layers of paper towels. Remove tofu from it's packaging. Pat dry with additional paper towels. Discard damp paper towels, and place the tofu block on top of the dry paper towel in the pan. Cover with another two layers of paper towel and another folded kitchen towel. Place in the refrigerator and cover with an upside-down plate. Weigh the top plate down so that it presses the tofu block fairly evenly (a few cans of vegetables or soda work well for this). Press tofu for several hours and up to one day, turning the block and swapping out the kitchen towels every few hours or when they become wet.

Press tofu (see above) or remove it from its packaging and pat dry. Cut into 1 inch cubes. Add 1 tablespoon of the oil to the rice cooker's inner bowl and push Cook button. Use saute setting, if available. Once the oil is hot, add tofu cubes and cook, stirring gently, until browned on all sides, about 10 to 15 minutes. Remove tofu to a paper towel lined plate to drain.

Heat remaining half tablespoon of oil in the rice cooker's inner bowl and push Cook button again, if necessary. Add vegetables and cook, stirring occasionally, until vegetables are tender-crisp, about 7 minutes. Remove vegetables to the plate with the tofu.

Remove flavor packets from noodles and set aside. Add water to the inner bowl of your rice cooker and push Cook button. Use white rice setting, if applicable. Cover and bring water to a boil. Add the contents of the flavoring packets and the noodles and cook, stirring often, for 2 minutes. Add vegetables and tofu and cook an additional 1 minute. Serve.
