Appliance: Rice Cooker - 6 cup capacity and larger.

Easy Polenta
   4 cups water
   1/2 teaspoon salt
   1/8 teaspoon baking soda
   1 cup polenta (coarse corn meal)
   1/2 tablespoon butter
   1/4 cup grated Parmesan cheese (optional)
   2 tablespoons fresh parsley or thyme, minced (optional)

Bring water, salt and baking soda to a boil in rice cooker's inner bowl. Use Brown Rice or Porridge setting, if available. Add polenta in a thin, steady stream, stirring constantly. Continue to stir for an additional one minute. Cover and cook for 5 minutes.

Remove cover and stir vigorously until completely smooth, about 30 seconds. Scrape down sides. Replace cover and continue cooking 25 minutes. Stir in butter, cheese and/or herbs, if using.
