Asian Noodle Frittata
Appliance: Rice Cooker - 8 cup capacity and larger.

Asian Noodle Frittata
Ingredients
   1 package ramen (any flavor)
   2 cups water
   1 tablespoon butter or cooking oil
   3 eggs
   1/4 cup grated cheese


Directions
Remove flavor packet from noodles and set aside. Add water to the inner bowl of your rice cooker and push Cook button. Use white rice setting, if applicable. Cover and bring water to a boil. Add the noodles and cook, stirring often, for 3 minutes. Drain.

Add butter or oil to the inner bowl of your rice cooker and push the Cook button. While it heats, beat together the eggs and contents of the ramen flavor packet in a medium bowl. Stir in noodles. Carefully tilt the rice cooker to spread the melted butter all across the bottom of the inner cooking bowl, then add eggs and noodles. Top with the grated cheese.

Cover and cook until eggs are set throughout, 12 to 15 minutes. Carefully slide frittata from inner bowl. Allow to cool a 2-3 minutes, then slice into wedges and serve.
