Appliance: Rice Cooker - 2 to 8 cup capacity.

Green Chili Chicken and Rice
   1 cup rice
   1 cup green salsa
   1 1/2 cups chicken stock or broth
   3/4 cup frozen Mexican style corn, thawed OR 1 (8 oz) jar Mexican style corn, drained
   1 cup "Pulled" Chicken or other precooked chicken, cut in chunks

Optional garnishes:
   Fresh cilantro, chopped
   Green onion, thinly sliced
   Sour cream
   Shredded cheese

Add rice, broth and salsa to the inner bowl of rice cooker and stir well. Cover with the lid and push Cook button. Use White Rice setting, if applicable. Cook 25 minutes, or until rice cooker switches to Keep Warm.

With rice cooker set to Keep Warm, remove the lid and stir in chicken and corn. Recover and let stand 8-10 minutes, or until chicken is warmed through, before serving. Garnish with sour cream, cilantro, sliced green onions or cheese, to taste.
