Appliance: Rice Cooker - 4 cup capacity and larger.

Cherries Jubilee
Ingredients
   1/2 cup red wine
   1/4 cup cherry preserves (strawberry jam will work, as well)
   1 1/2 cups pitted sweet cherries (fresh or frozen)
   1 tablespoon amaretto
   2 teaspoons lemon juice
   Ice cream or frozen yoghurt (for serving, optional)


Directions
In the inner bowl of your rice cooker, whisk together wine and preserves and push Cook button. Use saute setting, if applicable. Bring to a boil, whisking frequently while jelly melts.

Add cherries and cook for 5 minutes, stirring frequently. Turn off or unplug rice cooker and stir in amaretto and lemon juice. Serve while still warm over ice cream or frozen yoghurt.
