Brazilian Black Bean Stew
Appliance: Rice Cooker - 8 cup capacity and larger.

Ingredients
   1 teaspoon cooking oil
   1/4 pound spiced, smoked sausage, chopped
   1/3 pound cooked ham, chopped
   1/2 medium onion, diced
   2 cloves garlic, minced
   1 medium sweet potato, peeled and diced
   1/2 red bell pepper, diced
   1 (14.5 ounce) can diced tomatoes (with juice)
   1 jalapeno or Serrano pepper, seeded and diced (optional)
   1 cup chicken broth
   1 (15 ounce) can black beans, rinsed and drained
   Salt and pepper, to taste
   1/4 cup chopped fresh cilantro
   Small fresh mango, peeled, cored and diced (optional)


Directions
Add oil to the inner bowl of rice cooker and push Cook button. When warm, add the sausage and ham and cook 2-3 minutes. Use saute setting, if available. Add the onion and cook, stirring occasionally, until tender, 3-5 minutes. Add the garlic and cook 30 seconds, stirring frequently.

Mix in the sweet potatoes, bell pepper, tomatoes, chili pepper, and water. Cover and cook until sweet potatoes are tender, 25-35 minutes.

Stir in beans and cook an additional 5 minutes, until heated through. Season to taste with salt and pepper.

Switch rice cooker to Keep Warm. Mix in cilantro just before serving. Ladle stew into bowls and top with diced mango.
