This recipe is part of the Classic Recipes and Hamburgers Collection
1 pound ground beef (80/20 recommended)
   Cooking oil (optional)
   Salt and pepper to taste
Recommended Spices:
   1/2 teaspoon onion powder
   1/4 teaspoon garlic powder
   1 tablespoon Worcestershire sauce

If using recommended spices, sprinkle them evenly over ground meat and then fold it all together gently with your hands, just until evenly combined. Do not overwork. Overworked burgers will be mealy.

Preheat your contact grill according to manufacturer's instructions for hamburgers or to medium-high to high, depending on your model. Use grill plates, if applicable.

Shape beef into four patties, 1/2 to 3/4 inches thick. If using meat leaner than 80/20, brush burgers with a small amount of cooking oil to aid browning. Sprinkle both sides of patties with salt and pepper, to taste.

Grill burgers according to the following:
For medium-rare (warm red center), grill burgers to 130-135 degrees(F), 5-6 minutes
For medium (light pink center), grill burgers to 135-145 degrees(F), 6-7 minutes
For well-done (little or no pink remaining), grill burgers to 145 degrees(F), 7-8 minutes
For USDA recommended doneness, grill burgers to 165 degrees(F), 8-9 minutes

For juiciest burgers, allow them to rest 5 minutes before serving.
