Reuben Sandwiches
   4 slices rye bread
   Softened butter or mayonnaise
   4 slices Swiss cheese
   4 to 8 ounces of corned beef, thinly sliced
   1/2 - 3/4 cup sauerkraut, well-drained (or more, to taste)
   2-4 tablespoons Russian or Thousand Island dressing

Preheat contact grill according to manufacturer's recommendation for sandwiches, or medium high to high heat. Use flat plates, if applicable.

Spread butter or mayonnaise over one side of each slice of bread. Layer unbuttered side of bottom slices with one piece of cheese, the corned beef, the sauerkraut and the second piece of cheese. Spread dressing, to taste, over unbuttered side of remaining bread slice and place on top of the cheese and meat layers, buttered side up.

Grill sandwiches 3-5 minutes, until cheese is melted and bread is golden brown. Transfer to wire rack and allow to cool slightly before serving.
