Prosciuto and Provolone Paninis

Prosciuto and Provolone Paninis
Ingredients
   4 slices Italian or sourdough bread
   Softened butter
   4 slices Provolone cheese
   6 thin slices prosciutto
   1 roasted red pepper, cut into strips and patted dry
   2-4 tablespoons pesto


Directions
Preheat contact grill according to manufacturer's recommendation for sandwiches, or medium high to high heat. Use grill or panini plates, if applicable.

Spread butter over one side of each slice of bread. Layer unbuttered side of bottom slices with one piece of cheese, the prosciutto, the pepper slices and the second piece of cheese. Spread pesto sauce, to taste, over unbuttered side of remaining bread slice and place on top of the cheese and meat layers, buttered side up.

Grill 3-5 minutes, until cheese is melted and bread is golden brown. Transfer to wire rack and allow to cool slightly before serving.
