Grilled Pineapple Salsa

Grilled Pineapple Salsa
Ingredients
   1/2 of a fresh pineapple, peeled, cored and sliced 1/2 inch thick
   1/2 to 1 jalapeno pepper, seeded and finely diced
   1/4 cup red onion, finely diced
   1/4 cup cilantro leaves, chopped
   Juice of one lime
   Salt, to taste


Directions
Preheat contact grill to high. Use grill inserts, if applicable. Grill pineapple 3-4 minutes.

Chop grilled pineapple and transfer to a mixing bowl. Add remaining ingredients and toss to combine. Season to taste with salt. Can be served warm or cooled and refrigerated, up to 3 days.
