Mediterranean Vegetable Panini
Appliance: Contact Grill - 2 servings and larger.

Ingredients
   2 slices hearty Italian Bread (Ciabatta or Focaccia)
   Olive oil or softened butter
   2 slices Fontina or provolone cheese
   4-6 Marinated artichoke hearts, drained and patted dry, sliced in half
   2 tablespoons sliced black olives, drained and patted dry
   1/3 of a roasted red pepper (drained and patted dry, if using canned)


Directions
Preheat contact grill according to manufacturer's recommendation for sandwiches, or medium high to high heat. Use grill or panini plates, if applicable

Spread butter or brush oil over one side of the bread. Layer unbuttered side of bottom slice with one piece of cheese, the artichokes and olives, followed by the red pepper. Add a final layer of cheese and top with the second slice of bread, buttered side up.

Place assembled sandwich on grill and carefully lower the lid. Use the panini hinge settings (if available on your machine). DO NOT PRESS. Grill 4 minutes, or until golden brown and cheese has melted. Transfer to wire rack and cool 5 minutes before slicing and serving.
