Grilled Peaches with Balsamic Vinaigrette

Grilled Peaches with Balsamic Vinaigrette
Ingredients
For the Dressing:
   2 tablespoons balsamic vinegar
   1 tablespoon lemon or lime juice
   1 teaspoon vanilla extract
   1 teaspoon sugar (optional, see Note)
   2 tablespoons olive oil
   1/4 teaspoon black pepper, pink peppercorns or grains of paradise (ground)
   1/8 teaspoon salt
   
   1 to 1 1/2 pounds of peaches, halved and pitted
   Cooking spray or oil


Directions
Preheat contact grill according to the manufacturer's instructions for vegetable grilling or to high, depending on model.

Place dressing ingredients in a resealable glass jar or bottle and seal tightly. Shake vigorously for 30-60 seconds.

Spray cut side of peaches with a little cooking spray or brush with oil and grill until warm through and grill marks form on skin side, 3 to 5 minutes. Transfer to serving dish and drizzle with dressing.

NOTE: Balsamic vinegars vary widely in sweetness, as do peaches. If using a sweeter balsamic or local (farmer's market or tree-ripened) peaches, you may omit sugar.
