Grilled "Pina Coladas"

Grilled Pina Coladas
Ingredients
   1/4 cup brown sugar, packed
   1/4 cup spiced rum (Sailor Jerry is gluten free)
   Pinch of salt
   1 small pineapple, peeled, cored, and sliced (1 to 1 1/2 inches thick)
   3 tablespoons sweetened, flaked coconut


Directions
Preheat contact grill according to the manufacturer's instructions for vegetable grilling or medium-high to high, depending on model.

In a large bowl, whisk together brown sugar, rum and salt until sugar is dissolved. Add pineapple and toss until evenly coated.

Grill pineapple in a single layer until heated through and grill marks form, about 3 minutes. Transfer to serving dish and sprinkle with coconut.
