Citrus Grilled Swordfish
For the Marinade:
   1 teaspoon lemon or lime zest
   1/4 cup orange juice
   2 teaspoons Worcestershire sauce
   1 garlic clove, minced
   1/2 teaspoon salt
   1/8 teaspoon pepper
   4 swordfish steaks, 3/4 to 1 inch thick
   Lemon or lime wedges

Combine marinade ingredients in a gallon sized zipper bag and shake until well combined. Add fish and seal bag, squeezing out as much air as possible. Marinate, refrigerated, for 30 minutes to 1 hour.

Preheat contact grill according to manufacturer's instructions for fish, or use medium-high to high heat (depending on your machine). Use grill plates, if applicable. Drain fish and discard marinade. Place fish steaks on the grill in a single layer, not touching and grill until fish flakes easily with a fork, 4-6 minutes. Cook in batches, if necessary.

Squeeze a little lemon or lime juice over grilled fish and serve with additional wedges.
