Caprese Paninis
   4 slices Italian bread
   2 tablespoons olive oil (or so), divided
   4 slices mozzarella cheese
   1 tomato, sliced
   4 fresh basil leaves
   1 teaspoon balsamic vinegar (or so)
   Salt and pepper, to taste

Preheat contact grill according to manufacturer's recommendation for sandwiches, or medium high to high heat. Use grill or panini plates, if applicable.

Brush olive oil over one side of each slice of bread. Layer unbuttered side of bottom slices with one piece of cheese, tomatoes slices, and two of the basil leaves. Drizzle with olive oil and balsamic vinegar, and season with salt and pepper, to taste. Top with the second piece of cheese and place remaining bread slices on top of the cheese, buttered side up.

Place assembled sandwich on grill and carefully lower the lid. Use the panini hinge settings (if available on your machine). DO NOT PRESS. Grill 4 minutes, or until golden brown and cheese has melted. Transfer to wire rack and cool 5 minutes before slicing and serving.
