Breaded Chicken Parmesan Paninis
   2 frozen precooked breaded chicken patties (See Note)
   2 tablespoons grated Parmesan cheese
   4 slices Italian bread
   Softened butter
   4 tablespoons prepared spaghetti or marinara sauce
   2 thick slices fresh mozzarella OR 4 slices sandwich mozzarella

Preheat your contact grill according to manufacturer's instructions for meats, or to high, depending on your model. Use grill or panini plates, if applicable.

Grill chicken patties until breading is crisp and internal temperature reaches 165 degrees(F), 10 to 12 minutes. Remove patties to a wire rack and sprinkle with Parmesan cheese. Wipe grill clean.

Spread butter over one side of each slice of bread. Layer unbuttered side of bottom slices with a chicken patty, half the sauce and half the cheese. Place remaining bread slice on top of the cheese and meat layers, buttered side up.

Grill 3-5 minutes, until cheese is melted and bread is golden brown. Transfer to wire rack and allow to cool slightly before serving.

NOTE: This recipe is designed for frozen, fully-cooked breaded chicken patties, not uncooked frozen chicken breast. A frozen chicken breast will not cook through in the times specified in the recipe.
