Apple Strudel Waffles
   1/3 cup packed brown sugar
   2 cups flour
   2 teaspoons baking powder
   1/2 teaspoon baking soda
   1/2 teaspoon salt
   1/2 teaspoon cinnamon
   1/3 cup vegetable oil
   1 3/4 cups milk
   2 eggs, lightly beaten
   1 large apple, peeled, cored and finely chopped (about 3/4 to 1 cup)
   Cooking spray

Fit waffle plates into your contact grill and preheat according to the manufacturer's instructions, or to 400 degrees (F) or High heat. Alternatively, preheat your waffle iron.

In a large bowl or pitcher, whisk together brown sugar, flour, baking powder, baking soda, salt and cinnamon. Make a well in the center of the dry ingredients, and add the oil, milk, and eggs. Whisk until smooth. Fold in apple. Allow batter to rest for about five minutes.

Spray both the top and bottom preheated waffle plates with cooking spray. Add batter to center of the lower plate and use a silicon spatula to spread it to within 1 inch of the edge. Close the lid and bake until done throughout, 3 to 6 minutes, depending on your appliance. Carefully lift out waffles. Repeat with remaining batter. Serve immediately.
