Many of the Mexican dishes served in the United States, both in restaurants and by home cooks, are actually adaptations shaped to fit the American perception of what Mexican food should be. Some were never even Mexican to begin with, and were created in restaurants either in the state of Texas, or just across the Mexican border in restaurants catering to Americans. This collaboration of food cultures makes up the cuisine known as Tex-Mex.

Lengthy cooking times take Tex-Mex dishes off of many home menus. But, with your electric pressure cooker, dishes that typically take hours are done in a quarter of the time, or even less.
